Recipe – Cranberry Lentil Salad

Theresa brought this tasty and healthy salad to the DOM!

1 cup lentils
12 cup dried cranberries
14 cup parsley   chopped
1 teaspoon salt
12 cup walnuts   chopped
1 small lemon   juice of
2 tablespoons olive oil

In a saucepan bring 4 cups of water and lentils to a boil.

Reduce the heat to a simmer, cover and cook for 25-30 minutes or until tender.

Pour lentils into a strainer and rinse with cold water.

Fold all of the ingredients in a bowl and stir to combine.
