Jon brought these excellent cookies to the business meeting and everyone vastly enjoyed them. He calls them Taoist Cookies, cookies that put you in harmony with nature. Enjoy!
Healthy Oatmeal Raisin (Taoist) Cookies
Ingredients
Dry:
2 C WW flour
4 C toasted rolled oats (regular or instant)
¼ C wheat or oat bran (optional)
¼ C wheat germ (optional)
¼ C milled flax seed (optional)
¼ C cinnamon
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp nutmeg (optional)
Wet:
4 eggs beaten with ¼ C water
1/2 C oil
1/2 C apple sauce
1 C honey
2 Tbsp molasses
2 Tbsp vanilla
Yummy additions:
2-4 C total, any combination of:
chopped dried apricots
chopped dates
chopped prunes
chopped pecans or walnuts
raisins
pine nuts
Directions
Preheat oven to 335 degrees (it’s set low for the honey). In a large bowl, mix dry ingredients together. In medium bowl mix wet ingredients together. Mix wet stuff into dry stuff. Add yummy ingredients. If too wet add a little flour. If not binding add some more water. Drop by heaping tbsp onto oiled cookie sheet. Press down to flatten (these do not spread out). Bake 19 min or until a toothpick comes out clean.

Comments: Excellent. These cookies freeze well. Can substitute ¼ C brown sugar plus 3/8 C corn syrup for ½ C honey.
